Along with Christmas and Thanksgiving, Easter is one of the most anticipated holidays of the year. It arrives just as the weather starts to improve and spring is in the air. If you’re in need of some inspiration for fresh, Easter recipes, here are some we enjoy.


1. Easter Rainbow Salad


A feast for your eyes and your taste buds. This healthy salad puts the spotlight on vibrant spring flavours. A delicious combination of sweet and savoury.

Ingredients:


  • ⅓ cup white balsamic vinegar or balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • ½ teaspoon kosher salt
  • ⅓ cup olive oil
  • 3 tablespoons finely chopped pistachios, plus more for topping
  • 3 tablespoons finely chopped green onions
  • 3 tablespoons finely chopped fresh dill
  • 1 head Bibb lettuce or Boston lettuce, leaves separated
  • 2 golden beets, roasted,* halved, and thinly sliced
  • 8 ounces whole fresh strawberries, hulled and sliced (about 2 cups)
  • 2 watermelon radishes, peeled and thinly sliced
  • 2 ounces ricotta salata, finely shredded (substitute feta cheese, if desired)

For the soup

  • 1 small broccoli head cut in florets
  • 1 onion finely diced
  • 2 bunches wild garlic
  • 2 bunches watercress
  • 1 cup fresh spinach leaves
  • 1 &1/2 cups low sodium vegetable stock
  • 1/2 cup coconut milk
  • 5-6 mint leaves
  • 1 tsp coconut oil
  • 1/2 lemon juice only
  • Freshly ground black pepper
  • Mixed seeds to garnish

For the baked fries

  • 2 medium parsnips peeled and cut in 1/4 inch stripes
  • 1 tsp coconut oil
  • 1 tbsp soy sauce
  • 1 tsp chia seeds

  • ½ cup frozen peas, thawed
  • A few handfuls of salad greens
  • 2 radishes, thinly sliced
  • ½ cup crumbled feta cheese
  • ½ avocado, pitted and diced
  • ¼ cup chopped, toasted pistachios
  • ½ cup roasted chickpeas
  • Fresh herbs, for garnish (basil, mint and/or chives)
  • Sea salt and freshly ground pepper

Dressing

  • ¼ cup fresh basil or a mix of basil and mint
  • 1 small garlic clove
  • 1 tablespoon lemon juice, plus ½ teaspoon zest
  • 1 tablespoon white wine vinegar
  • 2 tablespoons extra-virgin olive oil, more as desired
  • ¼ teaspoon sea salt
